Last week I saw recipes popping up all over regarding tomato soup and grilled cheese sandwiches. Now that it’s not 70+ degrees and sunny here, I took our first cold and stormy night and made a quick and easy tomato soup and grilled cheese sandwich.
Tomato Soup Ingredients:
- 2 cans stewed tomatoes
- 1 tablespoon olive oil
- 1 tablespoon pre-crushed garlic (or one fresh clove)
- Small handful of basil leaves
- Pepper to taste
In a pot, heat up stewed tomatoes, olive oil and pre-crushed garlic. Stir in basil leaves and let cool. Once cool, put the soup in a food processor and blend it until smooth. Put the soup back into the pot and heat up when ready to eat. Add pepper if you would like.
I tried to put chicken stock in the soup, and I found it made it oily, so I tried to take most of it out. I would also like to try and add some cream to it next time.
Grilled Cheese Ingredients:
- 2 slices of thick bread (I used Trader Joe’s Whole Wheat Tuscan Pane)
- Slices of Trader Joe’s Cheddar and Gruyer melange cheese
We cheated and did it the easy way. Place cheese in between bread slices, stick on George Foreman, close lid and wait for cheese to melt. I wasn’t feeling so well and I wanted to eat quickly then lay on the couch. It was perfect on a cold, fall night and I’m hoping it combats the illness!
