Paleo(ish) Banana Bread

In an attempt to try and fit into what I call the “damn dress” for my friend’s wedding, I decided to try and eat Paleo style. For those of you who don’t know, the Paleo lifestyle is commonly called the “Caveman diet.” It’s essentially eating like our great, great, great ancestors before us, cutting out grains and sugar, eating meats, vegetables, fruits and nuts. Granted, I am not following it to a T, trying to eat Paleo during the workday, being a bit less strict at night, and I’ve had some trouble trying to cut candy out completely….

When I got home from last weekend, I could smell ripe bananas as soon as I walked into the kitchen. I thought I’d try to make some Paleo banana bread. I found a few recipes online, but when I got to the grocery store, I saw how expensive almond flour was, so I searched some more and found this recipe with coconut flour! I won’t lie, I used butter instead of coconut oil. I told you, I’m trying my hardest with this! It actually turned out really well! Very tasty but a bit mushy looking. I also stole a little trick from the last time I made banana bread. This  may  need to be a breakfast staple for the future!

Paleo(ish) Banana Bread *recipe from here

Prep time: 15 minutes
Bake time: 45 mintes


  • 4 eggs
  • 3 small, ripe bananas to mix
  • 2 ripe bananas to cut
  • 3/4 cups of gluten-free coconut flour
  • 1/2 tsp baking powder
  • 3 tbs honey
  • 1/4 cup butter
  • 1/2 tsp vanilla extract
  • 1 tbs cinnamon

Preheat oven to 350 degrees. Combine eggs, bananas, honey, vanilla and butter with a hand-mixer. In a separate bowl mix flour, baking powder and cinnamon. Slowly mix the dry ingredients with the wet ingredients until a thick batter forms. Pour half of the mixture into  a greased pan.

Take the other two ripe bananas and slice, then place on top of the batter.

Pour the rest of the mixture on top of the bananas and put into the oven for about 45 minutes. The original recipe says to put it on broil afterwards for 5 minutes, but I found that this just burnt my bread so I wouldn’t do this again.

Et voila! Banana Bread paleo(ish) style!

  2. I’ve tried several paleo baking recipes and always interchange coconut and almond flour…I just use whatever I have on hand. Some recipes call for both! I’m not sure why but I haven’t ran into any problems yet when using the “wrong” one haha!

    i am going to give this a try with coconut nectar instead of honey and see how we go. my last attempt at paleo banana bread with coconut flour could have broken i window i reckon and didnt rise at all. hopefully this will be a winner, i am desperate for some sort of bread for breakfast, getting over eggs or almond milk smoothies. haha
